Food Attack: Creative Fruit Food Recipes Pt. 1

This year I promised myself that I would eat healthier SNACKS to take care of my body and skin. Here are some creative fruit recipes that I believe are easy to make and I will most likely try for myself:

Citrus-Infused Strawberries

Makes 4 servings, 3/4 cup each
Ingredients:
  • 1 pound fresh strawberries, hulled and sliced
  • 2 tablespoons sugar
  • 1 tablespoon Grand Marnier, or other orange liqueur
  • 1 teaspoon lemon juice

Preparation:
  1. Combine strawberries, sugar, Grand Marnier (or other orange liqueur) and lemon juice in a medium bowl. Let stand, stirring once or twice, until the strawberries release their juice, about 10 minutes.

Pineapple-Rasberry Parfits

4 Parfita
Ingredients:
  • 2 8-ounce containers (2 cups) nonfat peach yogurt
  • 1/2 pint fresh raspberries, (about 1 1/4 cups)
  • 1 1/2 cups fresh, frozen or canned pineapple chunks

Preparation:
  1. Divide and layer yogurt, raspberries and pineapple into 4 glasses.

Chocolate and Bananas

Ingredients: 

  • 1 tablespoon semisweet chocolate chips
  • 1/2 banana, thinly sliced
  • 1 tablespoon nonfat vanilla yogurt

Preparation:
  1. Melt chocolate chips in a small bowl in the microwave. Top banana slices with the chocolate and yogurt.


Cinnamon Oranges

4 servings
Ingredients:

  • 4 navel oranges
  • 2 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1/4 teaspoon ground cinnamon

Preparation:
  1. With a sharp knife, remove rind and white pith from oranges. Cut each into 5 or 6 slices and arrange on 4 plates. Whisk together orange juice and lemon juice, sugar and cinnamon. Spoon over the orange slices.
